what to do with soggy tomatoes

an interlude before beginning my kind diet journey...
what do you do with soggy tomatoes?
don't throw them away...
cook with them,
or make them half a meal ;)

Tomatoes and Eggs
(like am omellette, but Greek-Style)

1- cut up your soggy tomatoes and throw them in your wok or frying pan with extra virgin olive oil!

2- adjust egg amount to however many people will be consuming the delish-dish. i use a lot because sometimes i make a sandwich the next morning for myself.

3- shake whatever you think appropriate into the eggs. a pinch of salt, pepper, oregano and garlic powder for me.
add to your tastes.


4- my favorite part- beat the eggs into submission.

5- they should look something like this when you're done

6- if it's too juicy, get rid of some fluid. if not, throw in the eggs!
it's a party in there!

7- flip flop the eggs and tomatoes until it looks like most moisture has been absorbed.
LML likes the final product piece-y but an omelette-like way is good, too!

it's all the same when it's taking up residency in your stomach...right?

  3. I was watching the TV show Castle one night and he put choloate in his omlette, but I can't imagine that being good...

    Myself, I've mixed the eggs with powdered spirulina to make them green. But that's as weird as I've gotten.

  6. I used to make eggs exactly like those when my bf and I lived together - before we went long distance.
    Isn't it great using all the leftover food from your fridge to make Saturday morning eggs? :)
